Foodie Post: Blueberry Pie

We're currently visiting my cousin, but I figured I'd share this recipe with you today, in case you have few ingredients and some time on your hands to spend. It's the perfect little treat to serve if you have people popping up to visit without a notice, because it only takes about 30 minutes to make, and the ingredients are very basic.

Blueberry Pie

2 eggs
1 dl sugar
100 gr butter
2 dl gluten free flour mix
1 tsp baking powder

On top:
2-3 dl blueberries
1 tbsp sugar
1 tbsp potato flour

1. Warm up the oven to 200°C. Butter the pie pan.
2. Whisk together eggs and sugar until very frothy.
3. Melt the butter. Add hand warm butter into the dough.
4. Mix baking powder into the gluten free flour, and add the flour mix to dough.
5. Spread the dough into the pan.
6. Sprinkle the blueberries, sugar and potato flour on top of the dough.
7. Bake for 20 minutes.

You can serve this bad boy with some vanilla sauce, but it's really not even necessary as the blueberries are so tasty as they are. I love how quick and easy this is to make - and how amazing it tastes. If you give this a go, let me know how you liked it.
