Gluten-free Pizza - Fast and Easy Recipe

Happy Thursday babes! Who else is so ready for the weekend? Because same, haha. It’s been quite the week of balancing all the different things, but I’m very motivated to pull through it all to get to the well-deserved weekend finally. I was planning on celebrating Valentine’s Day with a friend by having a coffee in a local place (for context, in Finland V-Day is more of a friendship day and I love that for us), but we found out today that won’t happen this year. But hey, that’s how things are for the foreseeable future with most meetings.

Today I figured I’d share one of my favorite recipes with you, and that is homemade pepperoni pizza. Now, I know some of you reading this are vegan or vegetarian, so when it comes to toppings, you can either swap them out to vegan alternatives or come up with a completely different set of toppings.

Unicorn Brownies

Oh my gosh am I late with this post. I meant to put it up last week, but so much has been up in my life that honestly I struggle keeping up with everything. But since I am baking these again today, it feels appropriate to post the recipe for you as well. The original recipe (in Finnish) is from K-Ruoka and you can check it out here (click!), but I did mine gluten-free as necessary, and the modified recipe can be found below in English. 

I had a ton of fun baking this and it turned out so well, which is uncommon for me if I just switch the flour instead of finding an actually gluten-free recipe to follow.

Key Lime Pie (Easy & Gluten-Free!)

Happy International Women's Day! Today is a good time to share this recipe in case you want to bake something for the occasion - or you know, just really want something sweet. This was surprisingly easy even though I was nervous about making the meringue. If you just focus on what the recipe says, you can do this too.

Bake With Me: Chocolate Chip Cookies

This time of the year, when you might be together with family and/or get surprise guests at the door, having an easy recipe in hand may be useful. That's why I'm reminding you of an easy, but classic one; Chocolate chip cookies! I found a recipe through Kinuskikissa (linked after the image), and just made it into a gluten-free one.

Bake With Me: Gingerbread Brownies (gluten-free & dairy-free!)

My mom linked me this recipe last month, and it sounded so amazing I just had to try making it. And I actually had the perfect time to do so about month ago, when my boyfriend's sister was visiting us. I've seen the same kind of pastries being currently sold in cafes, so this might be somewhat popular in Finland right now. Maybe. Not that I'm the one to know anything about trends since I kind of don't care.

Vanilla Spice Latte (dairy-free!)

As the evenings get darker, I like to make more warm drinks. My favorites are flavored coffees, and I often google for new coffee recipes to find something to create and try out. Today, I'm sharing a vanilla latte with a nice twist. A DIY Starbucks Vanilla Spice Latte (recipe I found here, and adjusted to my needs/liking)

Blogoween: Halloween Frappuccinos

The other day, I was searching the Internet in hopes of finding the right drink recipe to share with you. I wanted something non-alcoholic, relatively easy and something that would translate well into a dairy-free one in case you, who are reading this now, happen to be vegan or otherwise dairy-free. I came across articles describing Japan's Halloween frappuccinos their local Starbucks' are serving. You can find them here and here. They sounded challenging but not impossible, so I created my own copycat recipes of them. Mind you, I haven't tasted the real things so I don't have exact measurements, but I think with a little tweaking and having a real one to compare these to, I could make the recipe perfect.

Blogoween: Halloween Popcorn

As promised, today we're making a popcorn treat for Halloween. I like creating these mix and match type of popcorn snacks, as they are super quick and easy, and they can be made suitable for all the diets - unless someone's allergic to corn, of course. Popcorn is a good snack ingredient since it's not very unhealthy (I cook mine without any oil, even), it can be made into both savory and sweet, and the kernels are very inexpensive.

Seriously Strawberry Frappuccino - Dairy Free Way

Since it's been a hot minute I've tried making Starbucks drinks at home, I figured I should do it now and maybe blog the experience in case anyone out there wants to try this out too. In Finland the weather has been super hot so I was not in the mood for hot drinks - or even coffee - today, and therefore decided to recreate a strawberry frappuccino. In a dairy-free way, in case my plant-based and vegan friends want to make some too.

Hey lovelies! How are you today? ♥ I can't believe it's weekend again since it feels like the week has gone so, so fast. But I'm really happy to have a couple of days to sleep in and rest so that I can get rid of this darn flu soon. Foodie Post: Gluten Free Sprinkle Pancakes

Hey lovelies! How are you today? ♥ Happy Mothers' Day to all the moms out there! I started my day by calling my mom and wishing her a happy mothers' day, after which I went to a little run and then I've pretty much focused on sports. Anyone else here watching the Hockey World Championship? I will be for the next couple of weeks, like every spring/early summer.

Hello lovelies! How are you today? ♥ It's a wondeful new week, and it's pretty much the start of summer now that May has started. I've been planning outfits for the whole month (not done with that yet though), because I need to get some posts covered before travelling next month. There's quite a bit of prepping to do before I leave, but I'm so, so excited about travelling. It's been too long since I was properly abroad - July 2014 being the last time I was really anywhere. I will do a bit of a post about where I'm going later on, but probably some of you already know where I'm heading.

Today, however, I'm sharing this delicious little recipe with you. It's one of my go-to dishes, and it can be easily modified to suit your dietary needs.

Blogmas Day 1, Peppermint Mocha

Hello my loves, and happy 1st of December. Today starts the Blogmas - or the Christmas calendar, whichever you prefer - for this year. I don't think I've ever done this before, but I feel like this year, we are going to try this. Also, I have another thing for you little before halfway of the month, but that I will talk about once it's time for that. As today truly is the first day of Christmas time for me, I figured that starting out with a Christmas beverage would be a nice thing.

Foodie Post: Gluten Free Pumpkin Spice Donuts

Hey lovelies! I hope you're doing well today. I've been a little MIA a couple of days because my cousin's fiance is living with us for a little while and I needed to adjust to that a bit - meaning cleaning the place, making a good space for him to be in, and stocking our kitchen with food. Foodie Post: Green Tea Latte

Hey lovelies, and happy Wednesday! How are you doing today? As it is very grey, gloomy and wet outside, I figured I should share one of the go-to hot beverages I have for these kind of weathers. I'm sure many of you would enjoy this. It's green tea latte, the healthier version of the Starbucks drink. For this you can use the nut milk I showed the recipe for in this post, but basically any milk you love will do the trick. I just love nut milks on my drinks because they are easier to my body the regular dairy milk. This recipe is picked up here, but mine didn't come up nearly as pretty. It tasted amazing though!
