Foodie Post: Gluten Free Pasta Dish

Today, I really wanted to share a recipe with you. This, again is a gluten free one, and I'm hoping that I can show you through these posts that making all your favorite dishes is probably possible even as gluten free options. I'm so happy I haven't had to give up pasta altogether, because it is one of my absolute favorite foods in the world. And this recipe was pretty spot on.

Original recipe from Allrecipes (click!), but I modified it a bit for my own taste.

Spaghetti with Meat Sauce & Mushrooms
2 servings

2 teaspoons olive oil
2 tablespoons and 2 teaspoons minced onion
3/8 clove garlic, minced
2 teaspoons butter
5 ounces lean ground beef
1/8 teaspoon white sugar
1/4 teaspoon salt
1/8 teaspoon dried mint
3/8 (6 ounce) can tomato paste
5/8 (10,5 ounce) can beef broth
3/4 teaspoon dried basil

5 ounces spaghetti (gluten free)
1/4 teaspoon olive oil
1 tablespoon salt
rocket salad for garnish
grated parmesan cheese for garnish

small can mushrooms (or fresh ones)
tablespoon of butter

1. In a large skillet, warm olive oil over low heat; saute onion and garlic until onion is transparent.

2. Stir in butter and increase heat to medium; brown beef until no longer pink. Mix in sugar, 1 teaspoon salt and mint. Lower heat and stir for about 3 minutes.

3. In a large bowl, combine tomato paste and broth; pour liquid ans basil to pot. Simmer over very low heat for about two hours (or less, if you're making this kind of smaller portion), stirring occasionally.

4. Bring a large pot of water to a vigorous boil with salt and olive oil. Slip spaghetti into water holding on to ends until strands soften a bit. Cook over high heat for 7 to 8 minutes (or what your spaghetti tells you to). 

5. Heat up the butter in a small pan, and cook the mushrooms in it. 

6. Serve the sauce and spaghetti with mushrooms, rocket and parmesan. Enjoy!
