Foodie Post: Gluten Free Sprinkle Pancakes

Hey lovelies! How are you today? ♥ Happy Mothers' Day to all the moms out there! I started my day by calling my mom and wishing her a happy mothers' day, after which I went to a little run and then I've pretty much focused on sports. Anyone else here watching the Hockey World Championship? I will be for the next couple of weeks, like every spring/early summer.

Today, I also made some gameday food, including breakfast pancakes. And the recipe for those will be below:

Gluten free breakfast

Sprinkle Pancakes

1 1/2 cups gluten free flour
3 Tablespoons sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1 tired banana, mashed + enough milk to make 1 1/4 cups
1/4 cup vegetable oil
2 eggs
Dash of vanilla (probably about 1/4 teaspoon)
2-3 Tablespoons of jimmies (not nonpareils), gluten free!

Whisk flour, sugar, baking powder, and salt in a medium sized bowl. Mash banana in a large measuring cup. Add a little milk and stir them together, then add more milk until the measuring cup reads 1 1/4 cups. (You will use about 3/4 cup of milk). Whisk in oil, eggs, and vanilla. Then whisk the wet ingredients into the dry ingredients until just combined.
Add your sprinkles and stir.
Cook the pancakes on a pan or whatever you usually use for making the pancakes.
Serve fresh pancakes as they are, or add fresh berries, syrup, whipped cream etc.

This recipe is super easy and fun, and it's easy to adapt into a gluten free one by changing the flour. I also think you could make other flavors by replacing the jimmies with other small ingredient like tiny chocolate chips, little blueberries and such. These are so delicious you don't really need to garnish these with anything but I love to go overboard so I had mine with maple syrup.
