One of the most exciting things around holidays is definitely the holiday treats. Around Christmas, I love gingerbread maybe more than anything. So it's probably no wonder I was determined to make some gluten-free gingerbread on my own, but I also challenged myself and made a whole gingerbread house from scratch.
I think the whole house turned out quite well, although I must say there were some little struggles along the way. I used the same recipe I shared with you back in 2015 (click here to see it), and it makes enough dough to build a house, even a big one, and have a ton of gingerbread cookies from the rest. I still have half of the dough in my fridge because it keeps well if you pack it air-tight, even for weeks according to my mum.
Making the dough is easy, the most important thing to remember is to cool it well before baking from it, because it's easier to handle. And some say the taste is better when left to cool in the fridge overnight.
I got my patterns from a Finnish website (here), but didn't use all the detail pieces because it seemed like too much work and I didn't want to make a cluttered yard for the house.
I'm kinda happy how the house parts turned out, although I accidentally made the roof ones the wrong way round and had to glue them on "upside down". Also, as you can see below the pieces were a bit wonky and all so there were a lot of cracks all around the house when I assembled it.
As you can see, it wasn't too pretty sight.
But it resembles a house, which was good enough for me. Then, I mixed up some white royal icing and started decorating it.
I started off with roofing...
...and then added other decoration and candies until I was happy with the result.
I think this one came out very nicely. It sits on our kitchen table and brings Christmas vibes until we dare to eat it. My favorite thing about this is the chimney, and I would definitely make that again with a new gingerbread house.
