Key Lime Pie (Easy & Gluten-Free!)

Happy International Women's Day! Today is a good time to share this recipe in case you want to bake something for the occasion - or you know, just really want something sweet. This was surprisingly easy even though I was nervous about making the meringue. If you just focus on what the recipe says, you can do this too.

The original recipe in Finnish is by Risto Mikkola, and it can be found here (click!). I changed the cookies to gluten-free ones and replaced the vanilla seeds with vanilla sugar, but otherwise I did exactly like the recipe told me to.

Key lime pie 

Crust:
250 g (gluten-free) Digestive cookies (or similar)
80 g melted butter


Mix the ingredients into an even mix.
Place a baking sheet  on the bottom of a springform pan, and spread the cookie-butter mix over it.
Bake in the oven in 175 degrees (Celsius) for 8 minutes.

Filling:

juice of 3 limes and zest of 2, grated
5 egg yolks
400 g condensed milk
seeds of one vanilla bean (I used a teaspoon of vanilla sugar)
Mix all the ingredients together and pour the mixture over the baked crust. Bake in 160 degrees (Celsius) for 30 minutes.

Italian meringue:

300 g sugar
100 g water

Boil the mixture to 121 degrees (Celsius) or until it's thick and syrup-like.

Whisk 4 egg whites into a hard foam, add in the sugar syrup a little at a time, and continue whisking until the mixture is room temperature.

Pipe the meringue over the pie in small dots and cook until golden brown with a gas burner or in the oven under the heating element.

As I think I've said before, I'm not much of a baker when it comes to gluten-free things, but pies I can handle. Maybe because with pies, you don't have to make the dough rise anyway so there are less things to mess up. This one was surprisingly easy, even if the sugar syrup made quite the mess when I handled it.

    1. Suosittelen kyllä, mun mielestä tää oli tosi hyvää! Ja onneksi oli tuo suomenkielinen ohje noudatettavaksi niin tää tuntui hyvinkin helpolta. Ainut tosiaan että tuon sokerisiirapin kanssa meinasin saada melkoisen sotkun aikaan mutta siinä kohti vika oli todennäköisesti tekijässä :D
