Unicorn Brownies

Oh my gosh am I late with this post. I meant to put it up last week, but so much has been up in my life that honestly I struggle keeping up with everything. But since I am baking these again today, it feels appropriate to post the recipe for you as well. The original recipe (in Finnish) is from K-Ruoka and you can check it out here (click!), but I did mine gluten-free as necessary, and the modified recipe can be found below in English. 

I had a ton of fun baking this and it turned out so well, which is uncommon for me if I just switch the flour instead of finding an actually gluten-free recipe to follow.

You'll need:

Dough

250 g butter
2 1/2 dl strong coffee
5 dl gluten-free flour
3 dl sugar
4 tbsp cocoa powder
1 tbsp baking powder
1tbsp vanilla sugar
4 eggs

Frosting

9 dl powdered sugar
100 g soft butter
1 dl strong coffee
1/2 dl cocoa powder

Decorations

gluten-free mini marshmallows
gluten-free candies
gluten-free sprinkles
colorful chocolate flakes
etc.


How to

Melt the butter in a big bowl in microwave and mix in coffee.

Mix the dry ingredients in a bowl, and add them through strainer into the coffee-butter mixture.

Whisk the eggs lightly and add them into the dough.

Spread the dough into an oven pan over a baking sheet, and bake in 200 degrees Celsius for 15 minutes. Let cool before icing.

Mix all the frosting ingredients in a big bowl into a frothy creme.

Spread the frosting over the cooled dough.

Draw an outline of a unicorn with a thin stick to the frosting. Add marshmallows into the shape of the unicorn head, and add candies, chocolate flakes or such to the hair of the unicorn. Make horn out of sparkly decorations, and use dark candies or such to make eye, mouth and other facial details.

And then your unicorn is ready to serve.
