Gluten-free Pizza - Fast and Easy Recipe

Happy Thursday babes! Who else is so ready for the weekend? Because same, haha. It’s been quite the week of balancing all the different things, but I’m very motivated to pull through it all to get to the well-deserved weekend finally. I was planning on celebrating Valentine’s Day with a friend by having a coffee in a local place (for context, in Finland V-Day is more of a friendship day and I love that for us), but we found out today that won’t happen this year. But hey, that’s how things are for the foreseeable future with most meetings.

Today I figured I’d share one of my favorite recipes with you, and that is homemade pepperoni pizza. Now, I know some of you reading this are vegan or vegetarian, so when it comes to toppings, you can either swap them out to vegan alternatives or come up with a completely different set of toppings.

Gluten-free pizza crust (makes a whole baking pan)

4 dl of gluten-free flour of your choice

1 tsp salt

4 tsp baking powder

2 dl water

4 tbsp vegetable oil


Mix all the dry ingredients together.

Add water, mix in.

Add vegetable oil, mix in, and work the dough for a minute or two to make it as one piece as possible.

Put the dough on a baking sheet, and roll put the dough into the desired shape - we usually try to do somewhat of a similar shape to the pan, you can do whatever you desire. 

Add the toppings you like.

Bake in 250 degrees Celsius for 10-15 mins, until the pizza looks the way you prefer.

The combo we usually do is Dennis pizza sauce, Emmental-mozzarella shreds, pepperoni slices, mozzarella pieces, and tomato slices. Quite simple, but very good. If you don’t eat meat, there are vegan pepperoni alternatives, or you can use any veggie you desire and just add some pepper and spice to the pizza to get a very similar experience.
