Sweet Tea Time

I hope your week has started off well. Mine certainly has, the work has been entertainingly hectic but not too much so. I've been so happy there so far, and I feel like I've learned so, so much already. Working hard takes its toll though, so today I'm talking about one of the things that keeps me going.

So a while back, I saw this little recipe on Saija's blog (see here, she's such an amazing blogger!) and really wanted to try it as a gluten free version. Here, I'm sharing it to you, in case you need some gluten free treats in your recipe book as well.

Gluten Free Mug Cakes
1 portion

1 egg
5½ tablespoons gluten free flour
(a pinch of psyllium fiber)
1½ tablespoons sugar
½ teaspoon baking powder
25 gr butter
chocolate sauce / dark chocolate
your favorite chocolate candies (gluten free)
tiny gluten free marshmallows

Melt the butter in microwave. Mix egg, flour (psyllium), sugar, baking powder and chocolate sauce in a mug, and lastly add in the butter. Mix in a desired amount of candies. Make the mixture even and heat in a microwave with 750W for about 1,5 minutes. 

After taking out of the microwave, you should let it cool down a bit, because otherwise you'll probably end up burnt. After it's cooled down, you can add more candies if you feel like it. At least it will look cuter.

I enjoyed mine with a cup of tea, but of course you can pair it with whatever you like. One of the greatest things about mug cakes is that they are very easy to modify, so they are a great treat for those moments when all the people want different flavors. Just create the base (egg, flour, sugar. baking powder, butter) and add in any flavors your friends like. I will be testing out other flavors later this summer, so stay tuned for that within few months.

Now, it's time for me to get in the shower and then have a good night's sleep. I'm having a demonic acne cyst in my chin and I'm hoping to get rid of it before Friday, as it is also my birthday.
