Foodie Post: Cashew Milk

Heya babes! I hope you're having a good day today. I had fun at work but I am very happy to start the weekend tomorrow by cooking lots and prepping some blog stuff. And reorganizing my closet. While doing all that, I will be sipping some of my favorite coffees, done with cashew milk. 

And since buying nut milks can get somewhat pricey sometimes, it's good to know how to make them yourself. Which makes the milk healthier, too, because it's all natural stuff. Want to learn how to do your own? Read on:

Cashew Milk

1 cup cashew nuts (or any you desire)
water for soaking the nuts
3-4 cups water for the milk

Put the cashews into a jar (or any dish you can soak them in) with 2-3 cups of water and let them soak. Cashews take around 2-4 hours, some other nuts need more time. See this chart to find out how long which kind takes.

Drain the nuts, and rinse them, and then add them to a blender with 3-4 cups fresh (filtered) water. Blend them smooth on high setting for a minute or so. (I usually let them blend for a minute, let the mixture set for 30 seconds and do another minute of blending to make sure it's really smooth.)

Some recipes say straining isn't needed, but I usually strain mine anyways. I like my drinks smooth. Use a mull or similar fabric to strain the milk. The flesh of the nuts that will be left in the mull can be used for baking, porridge, or other cooking.

Lastly, you can flavor the milk as you please. My favorites are vanilla and cinnamon, but surely anything you love would be good for this. The milk stays good in the fridge from 2 to 5 days - if you don't drink it before that!

So that's the recipe for today, and I hope you enjoyed it. I've been trying to add more vegan options to my diet because I enjoy the taste of fruit and veggies, and because I know it's good for me. I'm not going full vegan just yet, if ever, but I do want to make better choices every now and then. Like the other day when I made vegan bacon, yum! So good in a meatless BLT - I may share a recipe later. For both bacon and the sandwich.
