Foodie Post: Rice Milk and The Best Chai Latte (+ why I stopped drinking dairy milk)

Hello lovelies! How are you today? ♥ Today was the last day of work before leaving for the trip, and I can't believe it's almost time to step on the plane to Canada. It's unbelievable. I've nearly packed everything, I just need to get some bits and pieces packed tomorrow (hygiene products and so on) and I'm completely ready to go. I've prepped my cameras, my cell phone, the laptop, everything so that I can get up and blogging starting on Sunday. It will be a ton of fun to document the trip, and I hope I get some bit of editing done in the evenings so that I can start posting content from the trip very soon after we get back.

Today, I will talk you a bit about one of my current favorite drinks, which is rice milk.

Like the title suggest, I did indeed stop drinking dairy milk. No, I'm not vegan, and no, I didn't go dairy free. But I cut drinking milk altogether. Why?

It wasn't for ethical reasons (sorry, my vegan friends, maybe some day though) although that is something to consider always when using animal products. It wasn't for medical reasons, because I should be able to handle milk just fine, no allergies, no nothing. But I started tyring this out when I switched my coffee milks to vegan ones. I actually tasted the veggie milks as they are, and have loved most of them. They don't leave an icky aftertaste like dairy does, and what's more, I physically feel better without drinking dairy. I don't get as tired, and I don't get as bloated. I've actually also started replacing the milk needed in our foods to veggie alternatives, and so far my dear hubby has taken it very well. So well in fact, that there's no need to buy dairy milk for either of us to drink as it is.

I will be exploring other veggie options - meaning, other dishes and so on - as well, but plant based stuff seem to be sometimes a bit hard to find since mine should be gluten free but the food industry here seems to love wheat too much. (#celiacproblems) Of course making my own is mostly an option, and I will try to switch out most of my meals to plant based ones eventually. I've already cut down to max. one meat meal per day, and I feel pretty good about it. I think I could explore veggie options in Montreal since it's such a big city

But anyway, I've gotten to love rice milk since it doesn't have allergens in it - nuts are sometimes a bit much for me and soy doesn't go at all with my body. So rice and coconut are the most reasonable ones, although I can use nut milks to some extend. The rice milk I've been buying lately is Planti Rice Milk, since it's a bit more affordable than the rest. But, I've done my research and have decided I need to start doing my own. (It comes cheaper and it is more pure.)

So this week, I was trying out this recipe.

It's just as simple as taking 1 cup cooked rice (like leftover ones from the previous dinner) and 4 cups water, putting them in a blender for like a minute and maybe blending it twice if you want very smooth milk. Then just strain it so that most of the firm rice comes off and you'll be left with the milk. Which you should flavor if you want to, and then store in the fridge (in glass jar or other hygienic container). It stays good for few days.

I love to use plant milks in coffees and teas, and below is one of the recipes I like to do eery once in a while:

Chai Tea Latte

1 cup milk of your choice
1 cup water
1 tsp cinnamon
½ tsp nutmeg
(1 star anise)
1 tsp cloves
½ tsp cardamom
(½ tsp ginger)
2 bags black tea

Bring water and milk to boil, add other ingredients. Bring to a boil again, take off from heat and let steep for 3-5 mins.

Or, cut corners by buying a chai tea mix and just steep that for few minutes. However you feel like doing. Also, feel free to add sweetener of your choice if you prefer that, I use honey with mine but you may like something else.
